Is there any NFPA standard addressing the concern of potential water mist spraying on to electrical equipment?
The equipment enclosures have to be suitable for the environment. See Table 110.28 in the NEC. The wiring methods would also have to be suitable for wet locations.

110.11 Deteriorating Agents. Unless identified for use in theoperating environment, no conductors or equipment shall belocated in damp or wet locations; where exposed to gases,fumes, vapors, liquids, or other agents that have a deterioratingeffect on the conductors or equipment; or where exposed toexcessive temperatures.
